Once you have completed these notes you can use it as a form for the next wine you taste. Also, include in your notes the feel of the cask where the wine was aged and assorted fruits that may have been added should you be there to see. As you are making your wine notes on the first sensations of the wine, you will be developing a taste for the wine. Once you have completed your notes and have made all of your observations you now need to cleanse your mouth or as professional wine taster say you need to cleanse your palette. You can do this with another good wine, eating food or eating cheese. You are now ready for your next wine tasting session and more notes.
